Tasted with Guillaume Vrignaud in Fontenay-près-Chablis, 24 January 2023
Guillaume on 2022:
“The fermentations are slow but I think it’s a good vintage – just 2 parcels had some impact from the frost – 45 hl/ha was our end result in those but the others were more like 60 and we had some VCI. I’m happy because we’ve had some lower volumes with the conversion to organic!”
Guillaume on 2021:
“Well, it was better than 2016 and 2017 – and we now have some warming cables in Fourchaume and I used some candles too – overall I had a little less than 50% of a normal volume. Most is sold too and we had to make allocations – some of the customers are already waiting 4-5 months for their next orders. I only bottled the crus in November after the harvest – we did have some Chablis at 10.5 and some of the crus not a lot more than 11°. We started harvesting on a Friday-Saturday to bring in our Fourchaume as rain was forecast for Monday and it made a difference, we did lose some degrees after the rain as the grapes took up some of the water.”
The wines…
This was a super range – wines that were largely excellent, except when they were touching on greatness! – The Clos de Fontenay will be a great one! One of my favourite vintages at this address.
DIAM since 2008 – not the whole range that year but the rest of the range quickly followed. All these wines were bottles, the 1er crus since November:”
2021 Petit Chablis
On the Portlandian Plateau des Clos – 4.7 hectares. Only 10 hl/ha – it was very badly hit by the frost.
Ooh – that’s a vibrant nose – plenty of lime citrus and minerality here. Supple, concentrated – ooh, now that’s a great one. Silky and complex – just a beauty!
2021 Chablis
9 different parcels – all around Fontenay – all separate elevage. Many of types of soil. Plenty of massale selections too, representing 12 ha. ‘I delayed the bottling as it wasn’t so balanced but I’m happy with it now that it’s in bottle:’
An attractive faint ‘mineral’ reduction. Extra intensity and more mouth-filling – not quite the feeling of concentration of the PC but still supple, silky and cushioned with lots of citrus action. Just a very delicious, properly classic wine – and persistent in the finish too.
2021 Chablis Les Champréaux
A single parcel of 2.68 hectares – though not all is bottled under this label. Barrel elevage (30%) – 500-litre barrels – ‘if I leave this in tank it has a tendency to become reductive – this avoids that.’
More open and more floral – the barrel is very well hidden here. Extra incisive, very mineral – only right at the end of the palate is a little rounding of the texture from the barrel but the flavour from these containers is practically absent – very well managed. Super finishing – excellent wine.
2021 Chablis 1er Cru Fourchaume
All tank elevage. ‘Old vines never the rendement.’
More open, crystalline fruit purity – very yellow, almost golden in style – well supported by some mineral notes – that’s a lovely nose. Ooh – fuller, more energetic, an obvious step up to 1er cru – that’s simply excellent wine again – potentially better than that! Top wine.
2021 Chablis 1er Cru Mont de Milieu
0.28 hectares worth, here only tank elevage. It’s an exchange for Fourchaume grapes – in this case not an organic vineyard.
A more direct and aromatic nose – strongly perfumed. Super intensity again – really mouth-filling too. A wine I’d certainly be (trying!) to have patience with – it’s big and powerful – this flavour is delivered with a punch. The finish shrinks rather quickly but then holds a hauntingly long line of flavour. I do prefer the Fourchaume today – but in 3-4 years more time – it’s possible that I could be persuaded otherwise!
2021 Chablis 1er Cru Fourchaume Les Vaupulans
Elevage in 500-litre barrels and (70%) tank. ‘I like a little reduction but the wood brings the balancing oxygenation that I look for.’
A narrower nose that’s more focused on fresh minerality. In the mouth, it’s incisive but more composed – easier to drink today – than the Mont de Milieu. The finish, like that of the Fourchaume, staying wide and persistent. Again – very well done with the barrels – I don’t taste or smell them. Excellent wine.
2021 Chablis 1er Cru Côtes de Fontenay Vieilles-Vignes
‘I modified the vinification a little with an amphora – 30% of the total with the rest of the elevage in tank.’
Not the largest nose but still a width of fine and vibrant minerality – a small floral accent to this nose too. Hmm, beautiful texture, a certainly fluidity to the style of this over the palate. A roundness too – more saline and holding a strong, persistent finish. That’s a great wine.

Les vignes ont entre 1 an pour les nouvelles plantes (récoltées seulement lorsqu’elles atteignent 3 ans) et 55 ans pour les Premiers Crus Fourchaume "Côtes de Fontenay".
« Chaque parcelle est récoltée et vinifiée séparément afin que puisse s’exprimer le potentiel des différents terroirs. La fermentation malolactique suit la fermentation alcoolique. Elle permet de stabiliser les vins en leur donnant un meilleur équilibre. Dès la fin de cette Seconde Fermentation, nous soutirons pour garder le plus possible de lies fines qui donnent aux vins en cours d’élevage plus de complexité, de finesse et de rondeur. Ces méthodes d’élevage permettent d’élaborer des vins de grande garde qui peuvent aussi s’apprécier dès leur plus jeune âge. »
Nous avons sélectionné ce Chablis Premier Cru Fourchaume Les Vaupulans 2019, il est suave, de bouche intense, aux connotations de fleurs blanches fraîches (aubépine) et de rose, riche au nez comme en bouche, est tout en nuances aromatiques. Le Chablis Premier Cru Fourchaume 2019, très charmeur, ample, d’une bonne acidité, avec des arômes d’agrumes et de fleurs blanches, tout en suavité, est vraiment remarquable. Beau Chablis Premier Cru Mont de Milieu 2019, au nez élégant dominé par l’amande et le coing, avec cette touche d’acidité alliée à une rondeur agréable. Joli Chablis 2019, il développe une bouche fine et fruitée, charmeuse et intense.
Le Petit Chablis 2019 est toujours charmeur par sa nervosité au palais. Et enfin ce Chablis Les Champréaux 2019, aux nuances de fruits frais et de grillé, classique, à prévoir avec des crevettes ou un turbot au beurre blanc.

Nous avons sélectionné ce joli Chablis 2018, au beau nez où se marie des notes boisées fines et une grande fraîcheur minérale complétée par une touche épicée et poivrée. Le Chablis Premier Cru Fourchaume 2018, tout en charpente, parfumé, fin et riche à la fois, avec des notes subtiles de pain grillé et d’agrumes, de garde.
Beau Chablis Premier Cru Mont de Milieu 2018, tout en distinction, riche en arômes comme en charpente, d’une grande ampleur aromatique en bouche (aubépine, pêche, noisette), très typé. Le Petit Chablis 2018, est un vin racé, d’une belle onctuosité en bouche, toujours minéral et complexe, de belle harmonie. Et enfin ce Chablis Les Champréaux 2018, est d’une grande minéralité, au nez très iodé, embruns puis après aération, on perçoit de la rose fraîche et les épices, un grand vin, de belle bouche avec une vivacité rafraîchissante.

"Produced from old vines dating to 1955 in a parcel of the Fourchaume vineyard, this wine is full of ripe fruits filled out with spice and almonds, lifted by fresh acidity. It is a rounded wine, full bodied and now mature. Drink now. "

The 2017 Chablis has a pretty bouquet with hints of white flower complementing the citrus fruit and Granny Smith apple aromas. This is nicely detailed. The palate is fresh and vibrant with crisp acidity, fine focus and impressive depth if not complexity towards the finish. Certainly one of the better Chablis Villages in this growing season. Domaine Vrignaud Chablis Fourchaume 1er Cru 2016 91 points
The 2016 Chablis Fourchaume 1er Cru has a well-executed bouquet with fresh green apple and wet limestone scents, strict and linear, very Chablis. The palate is very well balanced with a fine bead of acidity, one of the more graceful and elegant Fourchaume in this vintage with a precise, slightly nutty finish that lingers in the mouth. This wine reflects the ripeness of the vintage while still retaining crisp minerality. Creamed apples are balanced with a tangy texture and soft acidity. The wine finishes with a crisp aftertaste that gives a great lift. Drink the wine now.

From a single parcel on the Vrignaud domaine, the wine has 30% wood aging. That gives a ripe full character which emphasizes the rich vintage. Toast mingles with rich apples and touches of citrus. Drink this refreshing wine from 2017.

From old vines planted in 1955, this dense, impressive wine offers both perfume apple and pear fruits and a creamy texture. Behind this generous front, the wine is tight, steely and needs to age. Give it until 2018.

This is fresh with lemons and apples filled out by a mineral texture that gives the wine a fine bite. It's light, crisp and zesty. Drink now.

This is a soft, rounded wine full of yellow fruits, pears and red apples. It is textured with minerality and tangy lemon zest. The acidity at the end is still fresh and the wine could do with some more time before drinking. Wait until late 2016.

The fruit here is pure, fresh with the merest hints of its future richness. The green fruits, citrus and acidity are prominent, with a hint of toast and a finishing line of minerality. It needs to age, so drink from 2017.

This three-acre vineyard is home to Vrignaud's oldest vines, planted in 1955 on a southeast-facing slope, farmed organically. The wine aged on the lees in stainless steel casks for more than a year, developing a broad texture and a slightly stinky mineral intensity. The consentration of flavor from low-yielding old-vine fruit gives this an edge in a challenging vintage, its pale fire glowing through Mandarin orange pith flavors, its grand acidity a naked mineral streak ripped from the oyster-shell dunes of Chablis. Youthfully aggressive, this is a wine of brilliant richness and staying power.

Remarkably well balanced with a vibrant acidity and notes of crisp fruit, this wine is a flawless complement to an array of cuisines, offering a classic Chablis profile that is perfectly poised between freshness and richness. Chalky clay and limestone soils impart a solid mineral base that structures the wine, maintaining the roundness of the grapes which have gone from vineyard to presswith little to no intervention.
